Paleo Apple Cinnamon Muffins

I have a several friends who have recently discovered a long list of things they can’t eat including gluten, eggs, and in one case, agave.  I was looking for a baked goods recipe to make for them and came up with this modification to make it safe for all.

Ingredients

  • 2 cups almond flour
  • 1/2 tsp salt
  •  1/2 tsp baking soda
  • 1/4 cup arrowroot powder
  • 1 tsp ground cinnamon
  • 1/4 cup grapeseed oil
  • 1/4 cup brown rice syrup (not strictly paleo but a reasonable replacement for agave – use agave if you’re not allergic to it)
  • 1/4 cup unsweetened apple sauce
  • 1 tablespoon vanilla extract
  • 2 medium apples, peeled, cored and diced

Directions

  1. Preheat oven to 350 and spray Demarle muffin tray with olive oil (alternatively line muffin cups with paper)
  2. Combine all dry ingredients in a large bowl
  3. Combine all wet ingredients in a small bowl and whisk together
  4. Pour wet ingredients into the dry ingredients and mix until combined
  5. Fold in apples
  6. Bake for 35-40 minutes.  Let cool for 30 minutes before serving.
